Quick Meals For The Busy Family

The crockpot is my best friend. As a new mom, it’s quite possible I would have starved without my crockpot. We all have our favorite recipes for the crockpot but what about those times you rush out of the house and forget to throw something in your best friend? You get home from work, soccer practice, ballet, and drama club to nothing. Now what? The family looks to Mom for the answer to life’s biggest question; what’s for dinner? Fear not Moms, I searched the internet and came across some quick, 30 minutes or less recipes that are actually good and the family will enjoy. Get in your invisible jet, Wonder Woman, and fly with me to dinnertime.

Taco Soup

Prep Time: 10 minutes
Cook Time: 10-30 minutes (depending on how long you simmer)
1 lb ground beef or turkey
½ onion chopped
1 cup chopped roma tomatoes
1 can kidney beans with juice
1 can whole kernel corn (or half bag of frozen corn)
1 cup beef broth
¾ cup salsa
1 package taco seasoning
Pepper to taste

Brown meat and onion together in large pot. Add in rest of ingredients. Stir and add pepper or additional seasoning to taste. Let simmer for no less than 10 minutes. Serve in bowl with shredded cheese, sliced avocado and sour cream on top.

Serves 4-6 people

Pasta-roni Pizzazz

Prep Time: 10 minutes
Cook Time: 10 minutes

1 lb ground Italian sausage
1 medium zucchini diced and cubed
2 cups cherry or grape tomatoes, halved
2 boxes pasta-roni garlic & olive oil
Shredded asiago or Parmesan cheese

Follow instructions for Pasta-roni. While water is boiling cut up your veggies. In separate skillet brown and crumble Italian sausage. DRAIN OIL. Add in your zucchini and sauté for a few minutes. Add in tomatoes and cover with lid for 5 minutes allowing veggies to steam.

Layer on plate the pasta, topped with the meat and veggies and sprinkle cheese.

Serves 4-6 people

Loaded Fiesta Potatoes

Prep Time: 5 minutes
Cook Time: 15 minutes approximately

Large Rustic Potatoes (One per person)
1 lb ground beef or turkey
1 taco-seasoning packet
2 cups shredded cheddar cheese
1 avocado sliced
1 jar salsa
1 cup sour cream

Bake potatoes in microwave. Stab with fork and cook 4 minutes per potato. Brown meat in skillet and mix in taco seasoning, following seasoning directions. Once potatoes have cooked, slice down middle and layer with toppings. Meat first, then shredded cheese, sliced avocado, spoonful of salsa and spoonful of sour cream.

Serves up to 6 people

One Pan Balsamic Chicken And Veggies

Prep Time: 10 minutes
Cook Time: 20 minutes

¼ cup Italian salad dressing
3 tbsp balsamic vinegar
2 tbsp honey
2 chicken breasts, cubed
2 tbsp olive oil
Salt and pepper to taste
1 bag frozen green beans
8 oz sliced mushrooms
1 cup grape tomatoes, halved

Mix together dressing, balsamic vinegar and honey in measuring cup, set aside. Heat 1 Tbsp of oil and sauté for 4 minutes until they start to brown. Add in green beans and sauté for another 4-6 minutes. Remove veggies from pan and set aside. Add remaining oil to pan and cook chicken. Season with salt and pepper to taste. Once chicken is cooked, remove from pan and set aside. Add sauce mixture to pan and stir until sauce thickens to a glaze. Add chicken, green beans and mushrooms back to pan. Toss with sauce. Add tomatoes to pan and toss again. Cover with lid for 1-2 minutes to reheat all ingredients.

Serves 6-8 people

Linguine and Sautéed Veggies

Prep Time: 5 minutes
Cook Time: 10 minutes

½ package linguine noodles
1 bag frozen broccoli
8oz mushrooms, sliced
1 cup cherry tomatoes, halved
½ cup feta cheese, crumbled
3 Tbsp balsamic vinegar
2 Tbsp olive oil

Boil water in pan and cook linguine noodles. Drain pasta and toss with 1 Tbsp olive oil. In skillet heat 1 Tbsp oil and sauté broccoli and mushrooms for approximately 4-6 minutes. Add in tomatoes and cover with lid, removing from heat. Let stand 1 minute. Place noodles on dish and top with veggies, drizzle balsamic to taste and top with feta cheese.

Serves 4-6 people
