Toasted Pumpkin Seeds – A Salty Halloween Treat

Carving pumpkins is so much fun and one of Halloween’s best traditions, but in my house the roasting pumpkin seeds is our favored event. Years ago, a friend of mine brought in some homemade toasted pumpkin seeds to work, and I have been addicted ever since. She refused never to give up her recipe, so I have tried many times to recreate the snack. Over the last few years I have tried many different seasonings, oils, and baking temperatures. I believe that I have finally perfected the best recipe for this toasty salted treat.

Ingredients:

  • Seeds from 1 large pumpkin, rinsed and dried
  • 3-4 tablespoons of salted butter
  • Salt
  • Garlic Salt

Instructions:

1) Preheat oven to 225°

2) To Begin: Cut pumpkin, scrape out seeds, and rinse. After cutting the top off the pumpkin, use a strong spoon (preferably metal) to scrape and scoop out the seeds and pulp within the pumpkin. Place the gathered pumpkin seeds in a strainer and run under cold water to rinse and separate the seeds from all the other gooey bits.

3) Dry Seeds: Once the pumpkin seeds are rinsed, pour seeds onto paper towel to dry. Use more paper towels dab the seeds to help the drying process. (Note: the seeds do not need to be completely dry, just not dripping wet.) Move seeds to large bowl once dried to your likeness.

4) Season Seeds: In a small saucepan, melt 3-4 tablespoons of butter (depending on size of pumpkin/amount of seeds) and add 2-3 teaspoons of salt and 1 teaspoon of garlic salt together. Once melted, pour the butter mix over the pumpkin seeds. Stir the seeds until all are covered in the butter mix.

5) Bake Seeds: Pour the seasoned seeds onto a baking pan and spread into a single layer. Bake at 225° for about 40-50 minutes stirring every 10-15 minutes. Then raise the baking temperature to 325° and continue baking for an additional 10-30 minutes (depending how crispy you want your seeds) continuing to stir every 10-15 minutes. Your seeds should be light brown and crispy when done.

That’s it! Really easy and super delicious. Aside from the easy preparation and the tasty crispy texture, pumpkin seeds are also full of nutrients (magnesium, potassium and zinc). They also have TONS of health benefits, giving us plenty of reasons to keep munching! So Enjoy!

*Try using cinnamon and sugar (instead of salt and garlic salt) for a sweeter twist!
